The Drying Facility
(Appassimento)

We built our drying facility, better known as “Appassimento” or “Fruttaio”, in the ideal position to carry out this special production process.

 

It is located in Tregnago, inside the better know DOC Valpolicella, and it lay on the grounds of our Tregnago Estate.

 

Our drying facility is recognized as one of the biggest and avanced grapes drying center in the whole province of Verona. It can contain all the grapes that are produced by our company, destinated to the production of our Amarone.

 

The delicate drying phase is followed step by step through strict quality checks, constantly and directly carried out by Diego Cottini, and his technical staff.

During the harvest period, the best bunches are selected, laid on special boxes and moved to the drying facility. The boxes are designed to grant the perfect aeration, therefore dehydration of the grapes. Inside the fruttaio they are divided by variety, harvest date and plot of origin, in order to be able to follow, step by step, the drying process of each production area.
