The Winery

In 1995 the construction of the new wine cellar in Monte Zovo, began.

At that time, it was decided to build it on the on the grounds of the Caprino Estate, bought by Raffaello Cottini in 1965. Until those times our family held its entire production in the historical cellar in Fumane, founded in 1925.

It was choosen to place it on the slope of the hill, to make sure the whole production process were carried out from the top down, making it modern and sustainable.

Since the beginning, the new building was oriented towards energy saving and low enviromental impact and still nowadays is among the most ecological cellar in Italy, being able to be completely selfsustainable in terms of energy.

 

Here are carried out all the production phases, starting from the vinification, passing trough the ageing and arriving to the the bottling. Here there are also the rooms dedicated to visitors and hospitality.
